Sunflower is the oil most Indian kitchens buy refined, in a plastic jar, stripped of everything. Pressed cold it is a different thing entirely: pale gold rather than water-clear, with a faint seed sweetness behind it.
The seed is hulled and pressed slowly. Because it is high in polyunsaturated fat it is also the most light-sensitive oil we make, so it goes straight into the bottle and should live in a cupboard rather than beside the stove.
Nothing is bleached, nothing is deodorised, and no antioxidant is added.
