Sown as the monsoon retreats; yellow to the horizon by February.
Mustard is the one oil where the whole country already knows what real looks like. The pungency comes from allyl isothiocyanate, formed the moment the seed is crushed in the presence of its own moisture. Heat destroys it. Refining removes it deliberately.
We press black mustard slowly, in a wooden ghani, at forty degrees. Nothing is done to soften the sharpness.
The oil settles, filters through muslin, and is bottled. Give it a week and the bite rounds into depth.
