The same open drying yard has been used for three generations.
The coconuts are split by hand and laid out on raised racks. Eight days of direct sun brings the copra down to the moisture we want. Kiln drying would take one day; we do not do it, because kiln smoke lives in the oil forever.
The dried copra goes into the ghani in small charges. It presses cool, and the oil comes out already smelling of fresh coconut rather than of the copra yard.
We settle it, filter it through muslin, and bottle it. It will turn solid in your kitchen every winter. That is not a defect; it is the proof.
