Cooking Oils

Groundnut Oil

शेंगदाणा तेल

Bold, nutty and unmistakably alive. Pressed slowly from sun-dried groundnuts so the oil never meets heat it did not earn. Cold pressed, unrefined, with nothing added and nothing removed.

Harvest
October – December

Rain-fed groundnut grown on black cotton soil by smallholder families.

Groundnuts arrive in jute, never plastic, still carrying field dust. We hand-sort for shrivelled and split kernels, then rest them until their moisture settles to the level our press has always liked.

The ghani is a carved hardwood mortar with a wooden pestle, turning at fourteen rotations a minute. At that speed the nuts are crushed and kneaded rather than shredded, and the mortar never climbs past forty-one degrees. Nothing is added: no water, no steam, no solvent, no bleaching earth.

What drains out is cloudy and fragrant. It rests, drops its own sediment, passes through cotton muslin twice, and goes into the bottle the same week it was pressed.

What the slow press keeps
  • Naturally rich in Vitamin E

Cold extraction keeps the tocopherols that refining strips out at 200°C.

  • A genuinely high smoke point

Holds up to Indian tadka, deep frying and puri without breaking down.

  • Balanced fatty acid profile

About half monounsaturated fat — close to olive oil, but built for Indian food.

  • The aroma stays

Refined groundnut oil is deliberately deodorised. Ours smells of roasted groundnut, because that is all it is.

What is inside

  • 100% cold pressed groundnut (peanut) oil

That is the whole list. No antioxidant, no anti-foaming agent, no added vitamin, no flavouring, no colour.

How to use it

  • Everyday cooking

Sabzi, dal tadka, curries and stir fry. Use it exactly as you would any cooking oil.

  • Deep frying

Holds temperature well. Strain and reuse up to two times; no further.

  • Bhakri & thepla

A spoon in the dough gives a softness refined oil never quite manages.

  • Daily quantity

A family of four typically uses one litre in three to four weeks.
