Sesame is the seed the ghani was invented for. The Sanskrit word for oil, taila, comes from tila — sesame. Every wooden press in India can trace its geometry back to this seed.
The seeds are winnowed, washed, and shade-dried — never sun-dried, which would flatten the aroma. They press cool at thirty-nine degrees.
The oil is naturally protected. Sesamol and sesamin, two compounds the seed makes for itself, keep it stable far longer than its polyunsaturated content suggests. No antioxidant is added, because the seed brought its own.
