Hand-harvested from thorny heads; needs no irrigation at all.
Kardai grows where almost nothing else will — dry black soil, on residual moisture, with a thorny flower head that has to be picked by hand.
Because the seed is small and hard it needs the ghani's patience more than any other. We press slowly; anything faster and the mortar heats. The oil that comes out is the palest in our range and carries almost no aroma of its own.
That neutrality is the point. Some dishes want the oil to disappear.
