Brown javas grown on residual moisture with no irrigation.

Flax is where cold pressing stops being a preference and becomes the only option. Alpha-linolenic acid begins to degrade above about forty-five degrees; a commercial expeller will run at ninety.

We press javas at thirty-four degrees, in a shaded press house, in small charges. The oil is filtered once, minimally, and goes into the bottle within hours.

We press flax to order, twice a month. If your bottle says pressed on the eleventh, it was pressed on the eleventh.

What the slow press keeps
  • Among the richest plant sources of Omega-3

    Roughly 53% ALA — nothing else in a vegetarian Indian kitchen comes close.

    Plant compounds carried over from the seed hull; destroyed entirely by refining.

    Light degrades ALA, so the press house has no windows facing the mortar.

How to use it

  • Never heat it

    Not for cooking. Not for tadka. Heat undoes the entire reason to buy it.

  • Daily spoon

    One teaspoon in the morning, or stirred into dahi or a finished dal after the flame is off.

  • Drizzle

    Over salads, steamed vegetables, or khichdi at the table.

  • Storage

    Refrigerate after opening. Use within ninety days.
